Long time baker, always wanted to try sourdough

We get good oven spring and usually achieve and ear on our sourdough. Our sourdough is quite light with a glossy but not sticky crumb.

I feed daily with 2parts flour, 2 parts water and 1 part starter. Sometimes if it needs a kick, I add 1% rye meal on the flour weight
