Recipe

Starting ingredients

  • 60g Dark rye flour
  • 60g Water

Feeding ingredients

  • 100g Starter

Remove mature starter to make biga - add equal parts flour and water. Mix and leave to rise.

Measure flour
60g Dark rye flour

Add equal parts filtered water and stir vigorously. Leave on the counter to rise until it doubles.
