Silvia Colloca's book Love Laugh Bake. I met her and she encouraged me to try her sourdough recipes. I then used recipe from Baking School recipe book.

Caratteristiche

Ruby Rye is light and soft and I use it as a stiff starter, adding 85g strong wheat flour, 43 g water to 42g rye starter
