Silvia Colloca's book Love Laugh Bake. I met her and she encouraged me to try her sourdough recipes. I then used recipe from Baking School recipe book.

Characteristics

Ruby Rye is light and soft and I use it as a stiff starter, adding 85g strong wheat flour, 43 g water to 42g rye starter

Recipe

Starting ingredients

  • 50% Water
  • 50% Rye flour

Feeding ingredients

  • 1tbsp Rye flour
  • 1tbsp Water

1 tablespoon rye flour 1 tablespoon filtered water
1tbsp Rye flour 1tbsp Water

Starter is rye flour and water in equal parts
