After getting tired of the tasteless offering in most supermarkets I wanted to try making my own tasty bread and eventually discovered the delights and flavour of sourdough and now rarely bake or eat any other type of bread.
Characteristics
A lively starter, especially in warmer weather. Very robust as well, takes a lot of abuse and neglect

Starting ingredients
- 50% Dark rye
- 50% Water
Feeding ingredients

Stir starter and discard about two thirds, add two scoops of Rye Flour then mix in tap water to achieve consistency required
I have got to the point where I don't weigh anything, I just eyeball it.

Gordon originated at River Cottage and is 100% Dark Wholemeal Rye (Waitrose)
Called Gordon in homage to the Brian Blessed character in the movie FLASH, so when he is ready to use I can shout 'Gordon's Alive'!
