It is definitely more active in our warm, humid summer weather at the moment. I have had to alter baking times to suit this.

Recipe

Starting ingredients

  • 50% Unbleached plain flour
  • 50% Water

Feeding ingredients

  • 50% Unbleached plain flour
  • 50% Water

I keep my starter in the fridge during the week and bring it out to feed and/ or feed and use at the weekend.
50% Unbleached plain flour 50% Water

I discard about half, then add equal weight of flour and water

Working method

Only have a 100% starter, half flour, half water.
