Im from El salvador in central América , I have 2 years working on a bakery in Charlotte , the owner of the bakery got the starter 24 years ago from a French guy, our starter is 15% whole wheat 15%rye 70%white flour and 100%water, we keep the starter on the walk-in every day and is feeded every day
