Depends on how long it has been in fridge! At 10 days it is pretty potent, curls your nose hairs and has "hootch" liquid. at 5 to 7 days it is more lightly fruity.

Starting ingredients
- g Fresh ground red wheat flour
- 25g Fresh ground local organic rye flour
- 75g Well water
Feeding ingredients

I normally "make a new batch" when I use. Sourdough jar has been out of fridge for 6 to 8 hours, I put that in my recipe, then I add the above flour(s) water to the jar scrapings and pop back in fridge. If I do not use it in 10 days, I will discard all but a Tablespoon and add the ingredients as above.
