Since 2016

My mother made sourdough baked goods and pancakes when I was a child, so as an adult I decided to make my own starters.

Characteristics

Bob received his name because a friend of mine said he looked like "Sponge Bob" when fully active. Bob tends to be quite active and quickly develops his spongy texture.

Starting ingredients

  • 60% Durum wheat
  • 40% Water

Feeding ingredients

  • 60% Durum wheat
  • 40% Water

Mill whole grain berries to fine flour.
60% Durum wheat

Add water to durum wheat flour. Mix thoroughly for a thick batter consistency.
40% Water

Working method

Whole grain durum wheat milled to fine flour.
60% Durum wheat

Water added to durum wheat flour to make consistency of thick pancake batter.
40% Water

Result

Pancakes

Always a great option for using up excess starter instead of discarding it.

Corn Bread

I use Bob and Peruvian purple corn which I grind to make cornmeal. Bob doesn't mind fermenting the corn meal.
