Feeding ingredients

30 g starter 30 g water and 60 g 'OO' flour. Mixed, kneaded, folded untill is smooth. Shape a ball and cut a cross on top of it.

His full name is: Kovász Kálmán. Started from whole wheat rye flour, but quickly turned to white wheat based flour diet. Had a couple rough time in the first yeat, but since he is a solid performer. Triples in room temperature about 6 hrs, keeps well in the fridge over 2 weeks. :-)
