I have been a home brewer, so I have a great interest in fermentation. When I found out how to make a great loaf of bread I was immediately hooked.

Characteristics

Craig has been a very active starter since I made him. He is a blend of 50/50 whole wheat flour and bread flour. 100% hydration.
