Caratteristiche
The starter comprises Ragi flour or finger millet, commonly found in India. This addition of ragi adds a unique nutty flavor to the dough which may also have upto 10-15% ragi flour. Additionally, this flour being milled as a whole grain tends to take in more water in the dough. The flecks of ragi spot the entire dough adding a unique beauty to the crumb appearance.

Luna comprises 3 ingredients, two flours and water.
Luna started as a 100% wheat starter, but progressed over time into a starter using upto 33% of Ragi flour (finger millet), a common grain in India. This adds a different complexity of flavor (slight nuttiness) as well as to the appearance of the dough and final crumb of the sourdough, i.e., flecks of ragi appear across the crumb.
