My apprentice and I started the little starter for fun to see if we could keep him alive. In the past, others using apples, potato, sultanas etc all took off and fermented well, but lack of care let them die. This one, Lewis, isnt going anywhere. He is fed weekly and is very healthy.

Caractéristiques

Makes a great loaf. Award winning sourdough in 2023 Victorian Baking Show. More of a hobby, not produced for sale...yet. Only made in small batches of 8 loaves, but makes very open crumb and perfect crust, with nice open "ear". Have made many different flavours. Needs work on hydration and moulding abilities.

Waste all except 226g Feed with 160g flour, 160g water. Stir and leave out for day. Back into coolroom for another week.

Really well, as long as hydration wasnt too high. Coolroom overnight, then freezer for 10min before being thrown in oven
