I wanted to learn a new skill and it felt like something creative that I could do.

Characteristics

The Shire is fast moving and has a fairly mild taste. It is not overly sour and is great for baking a plethora of things. It can be made to taste more sour, if needed. It likes to be fed twice daily when out and LOVES to rise outside (lightly covered) in the sun. It's happy to travel. The Shire is versatile, if nothing else.

Starting ingredients

  • 50% All purpose flour
  • 50% Lukewarm tap water

Feeding ingredients

  • 50% All purpose unbleached flour
  • 50% Lukewarm tap water

I feed my starter on the weekends first when I wake up then again between 8-10 hours later (or after it has peaked).

Working method

My sourdough starter is comprised of unbleached all purpose flour and lukewarm tap water. It get stored in the fridge for most of the week and is taken out on weekends when I can bake. It is feed twice daily when it's not in the fridge with a mixture of half water and half flour. I take it on the occasional road trip so it can taste air from all over.
