Been doing it for 30 years. I’ve been doing more foraging and saw the idea to use juniper berries for the yeast and wanted to try it. It has been my favorite.

Characteristics

Such a healthy happy starter. Has a very slight juniper taste to it which I’m sure will disappear after each discard and feeding.

Recipe

Starting ingredients

  • 2tbsp Unbleached flour
  • 2tbsp Well water
  • 1tbsp Juniper berries

Feeding ingredients

For first 3 days added 1/4 cup flour and 1/4 water every 8 hours. After day 3 discarded half (used it) and added 1/4 cup flour and 1/4 cup water at each feeding.. I’m in Maine. It’s cold so I keep the starter on heated seedling mat .

Working method

My sourdough is named June because I used juniper berries to collect the wild yeast. And my birthday is also in June.
