Characteristics

Eve is extremely reliable and consistent in flavours and performance. She provides flavours that are unique, and that statement is from many who enjoy my bread, including Europeans. They say she has a certain tang they've not experienced before. A local restauranteur who is also an accomplished pastry chef has stated the flavours are as good as any she's had in France.

Starting ingredients

  • 50% Robin hood whole wheat ap flour
  • 50% Robin hood unbleached all purpose

Working method

These flours were the base when I made Eve and I've continued to use them. I like the dependability and performance, but most of all, an easy and consistent supply. I refresh Eve twice a day religiously, as close to 12 hours apart as real life allows. Normally a 1:2:2 feeding. From that jar, I make all levains to bake approximately 30 loaves a week (on average).

My most common bake is a 67% hydration with ~ 12% WW flour all prefermented in the levain.
