Mix flour, water, and a bit of 3-day apple kvass.
49% Organic wholegrain rye flour
49% Clear water
2% Apple kvass

Leave it for 24 hours. Then discharge about half of the sourdough and refeed it with a mix of 50% of water and 50% of flour.
