Feed at 100% hydration, leave at room temp 8hrs, then 38f over night til next days use

For bread: sponge mixed equal parts starter, water and flour (type 85, organic), set out over night and mixed w additional water flours (85 and 00). Fermented at room temp 8 hours w multiple folds, shaped and held over night to bake in am.
