I need a gluten-free bread, but also want to have a regular texture for my husband. I learned that einkorn is more than just a wheat, but actually an ancient, unabridged wheat whose chromosomes are few and whose gluten is easy to digest. I want to take it a step further with a natural and wild yeast starter to further enhance the digestibility and nutrition of my baked items.
