- 50% Filtered water

Stored in a glass 2-cup mason jar, pour off hooch accumulated on starter. Remove half starter and discard.

To starter add 3 tablespoons flour King Arthur non-organic bread flour.

To start add 3 tbsp filtered water. Water filtered in Brita water filter stored in fridge. Mix until no lumps remain.

Let starter sit at room temperature 8-12 hours, or until it has reached the top of the mason jar (tripled in size). Use portion immediately for bread, and/or store in fridge for up to two weeks.
