Mine seems to be hyperactive. Within a couple hours of feeding it balloons to 3-4 times the original volume. It has a clean yeasty aroma with barely a hint of sour.

Make bread or remove half of starter.

Add 1/2 cup water.

Add 3/4 cup all purpose flour, stir together and cover.

I started with whole wheat flour and water to make a loose dough and let it set for 24 hours.

Feed twice daily by removing half of the volume, adding 3/4 cup all purpose unbleached white flour and 1/2 cup water and stir it all together.

Result

Boule

Large round ball of bread. Chewy caramelized crust with a pale interior and medium crumb ideal for sandwiches.
