She’s 90% strong white bread flour and 10% rye. I keep her in a proofing box at a steady 78•F from about 7 a.m. until 9 p.m and reduce temperature to 72•F from 9p.m until 7 a.m. she is fed 3 times a day - At 7 and 2 the feeding is at a 1:2:2 ratio and at 9 p.m the ratio is 1:5:5. She’s a very active gal!
