I have been doing a low carb diet for a long time. I recently lost 77 lbs and am introducing some breads to my diet. I have always liked real sourdough bread and I also owned a micro brewery . I know a lot about making sour beer and sourdough is an extension of my experience with beer.

It's a San Francisco culture that has been going for a little while. So far it has made excellent bread.

So far it has been very healthy and baking well. I worked up the culture using adjusted distilled water with a ph of 3.1
